I have to recommend Christopher Flaherty's 3 'Universal Warhames Rules' supplements covering such matters as balloons, field bakeries, pontoons, encampments and all kinds of other quirky stuff. The beauty of them is that they can be easily adapted to any rule sets. And even if you don't use the rules they are full of interesting bits and pieces. Following them I've developed morale and casualty mitigation modifiers for vivandieres and cantinieres, Larrey ambulances and water carts (for Black Powder). It gives the opportunity to make functional those bits and pieces which were there before only to decorate the table. I'm considering a field bakery. Dr Flaherty's also has a book on wargaming Napoleonic Ottomans coming out and those of you who have used his Ottoman uniforms website will know that it will be good.
